What you'll need

Ingredients

2 cups Flour
1/3 cup Sugar
2 tsp Baking Powder
3/4 tsp Salt
1 tbsp Lemon Zest
10 tbsp Cold Butter
1/2 cup Heavy Cream
1 Egg
6 ounces Blueberries
3/4 tsp Vanilla Extract
2 tbsp Milk
3/4 cup Powdered Sugar
2 tbsp Fresh Lemon Juice

Cook it step by step

Method

Preheat oven to 400F (200C) and line a sheet pan with parchment paper.

In a bowl, combine flour, sugar, salt, baking powder, and lemon zest. Add butter and work by hand until the mixture resembles a chunky meal.

In a small bowl, whisk together the cream, egg, and vanilla extract. Create a well in the center of the dry mixture and pour the wet mixture into the well. Add the blueberries.

Gently mix with a fork until combined, then turn the dough out onto a floured surface. Shape into a square, cut into 4 squares, and then cut the squares into triangles to make 8 triangles.

Place the cut scones on the baking sheet and brush each lightly with the egg wash.

Freeze the tray of scones for 5 minutes (or refrigerate for 15 minutes) and then bake for 20-25 minutes until golden brown.

Meanwhile, mix the glaze by whisking together powdered sugar and lemon juice until smooth. Drizzle over the scones while still on the baking sheet.
