What you'll need

2 packs Frozen Udon
1.5-2 lb Mushrooms
4 oz Pancetta
10 oz Silken Tofu
1 tbsp Mirin
1 tbsp Soy Sauce
Parmesan
Chives
Truffle Salt

Cook it step by step

Method

Slice the mushrooms into bite-sized pieces and divide into two batches.

In a cold pan, cook the pancetta until crispy, then remove and set aside.

Add one batch of mushrooms to the pan and cook over medium-low heat until golden and tender.

Toss the remaining mushrooms with oil and salt, then air fry at 350°F for 20-25 minutes until crispy.

Blend the silken tofu, mirin, and soy sauce until smooth.

Cook the frozen udon according to package directions.

Stir a pinch of truffle salt into the sautéed mushrooms, then add the tofu sauce and cooked udon, tossing until coated. Serve topped with Parmesan, crispy mushrooms, pancetta, and fresh chives.
