2.2 lb Beef Shank
1.1 lb Beef Tendons
8.5 cups Water
3.4 fl oz Coconut Milk
1.8 oz Evaporated Milk
1 tbsp Salt
1 tbsp Sugar
1 tbsp Beef Stock
1/2 tbsp Flavor Enhancer / Mushroom Stock Powder
8-10 cloves Garlic
15 Shallots
6 Candlenuts
0.8 In Turmeric

0.8 In Ginger

1 tsp Coriander

1/2 tsp Cumin

1 tsp Whole White Pepper

Oil

2-3 slices Galangal

2 stalks Lemongrass

3 Bay Leaves

5 Lime Leaves

5 Cardamom Pods

5 cloves 5 Cloves

1 stick Cinnamon

1 Star Anise

1-2 Potatoes

2-3 Tomatoes

1 Green Onion

2-3 stalks Celery

Fried Shallots

Bird’s Eye Chili

Kaffir Lime

Oil For Frying

Soto Betawi Meat and Broth

10 small Shallots

1 Tomato

0.9 oz Green Bird’s Eye Chili

1 tbsp Sweet Soy Sauce

1 tbsp Oyster Sauce

1 tbsp Ghee / Margarine

Seasoning

Cook it step by step

Method

Blend the candlenuts, garlic, shallots, ginger, turmeric, cumin, coriander, and white pepper with oil until smooth.

Sauté the blended spices until oily and fragrant, then add lemongrass, galangal, bay leaves, lime leaves, cardamom, cinnamon, clove, and star anise.

Add the sliced tendons and beef shank, season with salt, sugar, and beef stock, and stir.

Add water, green onions, and celery, pressure cook for 45 minutes, then add coconut milk, evaporated milk, and flavor enhancer.

Slice the potatoes and fry until cooked.

For the Stir-Fried Soto, heat ghee, sauté green onions, tomatoes, shallots, and bird’s eye chili, then add meat, oyster sauce, sweet soy sauce, and seasoning.
