What you'll need

Ingredients

0.6 cups Raw Jasmine Rice
1 tbsp Light Soy Sauce
1 tsp Dark Soy Sauce
1 Dash Sesame Oil
1 tbsp Olive Oil
1.9 oz Mayo
0.7 oz Greek Yoghurt
1 tsp Rice Wine Vinegar
1 tsp Sesame Oil
1 tbsp Honey
1 tbsp Sriracha
1 Tin Tuna, Drained
1/2 Cucumber, Finely Sliced

2.1 oz Edamame

1/2 Avocado, Diced

1 Spring Onion, Finely Sliced

Nori Sheets, On the Side

Black Sesame Seeds

Cook it step by step

Method

Cook the jasmine rice, then let it cool completely.

Heat the oven to 220°C or 200°C fan.

Mix the cooled rice with the soy sauces, sesame oil, and olive oil. Spread onto a lined baking tray in a thin layer.

Bake for 35–40 minutes, stirring every 15 minutes, until golden, crisp and slightly chewy in the center.

Mix together the mayo, Greek yoghurt, light soy sauce, rice wine vinegar, sesame oil, honey, and sriracha to make the dressing.

Add the tuna, cucumber, edamame, avocado, and spring onion to a bowl. Add the crispy rice and toss with some of the dressing.

Garnish with black sesame seeds and serve with nori on the side.
